Zojirushi Auto Bakery Bread

We sell the Zojirushi Home Bakery (available in our store), so we get a lot of questions about a whole wheat recipe that will work - THIS ONE WILL!  Sue and Ashley both use this recipe in the Zoji, and it always works.

Place in order in the pan to the bread machine, making sure the paddles are in place:

  • 1 ½ cups hot water
  • ½ cup oil ( 1/3 cup if use egg)
  • ¼ cup honey
  • 4 ½ cups fresh milled flour
  • 2 tsp. salt
  • 2 Tbs. Lecithin
  • 1 tsp. gluten (optional)
  • 1 egg (optional)

Make a small well in the middle of the flour and place:

  • 1 Tbs. Yeast

Bake on desired settings.

The Zojirushi Bread Machine has a "Homemade" setting which allows you to alter the settings to suit your taste.  We found the factory settings baked too long making the crust very dark and the bread dry.  Our "Homemade" settings work beautifully and we get delicious bread every time.  The instructions for changing the settings are in the back of the owner’s manual.  Once set, this Homemade Cycle" sill have these settings unless you change it again.

Our settings are as follows:

Preheat—18 min.                                        Same
Knead—20 min.                                          Same
Rise 1—45 min.                                           Same
Rise 2—50 min.                                           26 min.
(This time may need to be less if you find that your bread rises, then falls)

Rise 3—off                                                  Same
Bake—36 min.                                             41 min.
Keep warm—off                                          Same

Completion time is 2 hrs. and 45 min.

Halved it and added extras! I tried this recipe 3 times... I have a Toastmaster bread maker and I used this exact recipe. I think it was a bit much, because during the "whole wheat" setting, the bread rose too much and ended up falling to a dense loaf. I had great results when I used half the recipe (no egg, with gluten, no lecithin). I also used the ratio of 3 parts garlic salt to 1 part sea salt to equal the recipe amount. Last, I added a little fresh basil to the mix and this time the bread was PERFECT!!! It was the same consistency as stuff I've bought at the store Home Pride! :)

Perfect! Thank you for this recipe! The manufacturer's recipe was not turning out well and my family hated the bread. Since I found this recipe, they LOVE my homemade bread and even prefer it over anything else - yay!

After changing the settings on the "homemade" options I was ready to go. I made bread 2 times and both times the bread sunk in the middle. When I sliced it down the middle, the bread was perfect on the inside. Not too dense or doughy. So what do I need to do to get a perfect looking loaf of bread out of my Zojiirushi? Thanks for any suggestions you may have.....Mary

For the Lecithin, do you use granules or liquid?

I used granuals. Since then, I discovered that my wheat may have gotten some moisture it the bucket. So if you have this machine, I'm sure it makes great bread when using great flour. I now have a Bosch and am making great bread for our family.
