Almond Cake

  • 1/2 cup Butter, Melted
  • 1/2 cup Milk
  • 1/2 tsp. Almond Extract
  • 4 Eggs
  • 1 1/2 cup Sucanat w/ Honey
  • 2 cups freshly milled Soft White Flour
  • 2 tsp. Baking Powder
  • 1 tsp. Salt
  • Preheat oven to 350 degrees.

    Coat a 12 inch square cake pan with cooking spray.

    Combine melted butter, milk, and almond extract in a bowl and set aside.

    In small mixing bowl, beat eggs slightly.  Gradually add Sucanat w/Honey, continuing to beat at high speed until thickened, about 2 minutes.  Add flour, baking powder and salt; blend at low speed just until moistened.  Add butter mixture; blend at low speed just until thoroughly mixed.  Pour batter into cake pan and bake 25-30 minutes or until top springs back when lightly touched in center.

    Top with whipping cream, strawberries and chocolate sauce.
